The term itself dates back to the 17th century when letter was still delivered by mail. They've been a long standing part of human history and I see no reason why not to include at least one on the island. While admittedly they don't provide an abundance of essential resources like food, water, and weapons they aren't useless.

Built in a variety of ways they can offer unique and substantial protection from the undead horde during the night.
While they tend to have many windows in some cases they're are too high to reach. For situations where they aren't barricades or items can be used to block entry. With so many entry points it may seem like a bad choice for defense, but depending on the zombie AI pathing it could prove to break up the impending zombie horde making it more manageable. Instead of focusing on one window and climbing in through a single point their efforts could be dispersed and they enter at different intervals in fewer number.

If defending the windows doesn't work out in your favor there is usually an interior room within posts offices to fall back to. Some of which sport a counter which could be used to shoot out of in a second wave of defense. They of course have roofs as well that may or may be be accessible.

Along with this it could offer miscellaneous items to be used in crafting or for campfires in the form of paper and envelopes for kindling.

Outside of game mechanics a post office could play a crucial role in developing the setting and plot. Aside from newspapers and personal diaries the post office will be an information hub for those living on the island. There's a variety of information sources that can be found there. Some examples would be addresses, bills, bulletin boards, brochures, leaflets, letters, magazines, names, notices, packages and paperwork. Through these an array of information can be learned from seemingly random info about a shop having a sale to a resident of the island visiting a forested area of the island frequently. It can help fabricate the illusion of a society that was once alive on the island as well as give hints as to what happened.

What? No. We can't stop here. This is bat country.
Can't believe it hasn't been suggested already, maybe people are trying to think of the more obscure/unique buildings and yet completely missed a simple but great one... apart from it having a solid foundation and good defence, the thought of someone trying to get a postal service up and running after a zombie outbreak would be funny as hell and a good way to negotiate or do business with others.

Perhaps. I hadn't thought about that possibility. I remember reading a thread or comment about a postal service through mailboxes, but it seemed to get a mixed response. I think at best it could act as an information hub for advertisements or directions. Groups of survivors could come by and leave their trading outpost location. Then anyone to pass by the post office could be told where to find one. If there's ever a map in the game they could possibly be found there and handed out, but that may be better suited for a chamber of commerce or city hall building. Though, people could try I suppose haha.
